The Coach and Horses

Generate a pub — its name, its sign, and the entirely invented local history that explains the name. Steer it with a few choices: how old, how rural, whether something bad happened here. Real pub names follow real patterns (a heraldic beast, a trade, a coaching route, a corrupted saint), so the generator follows those patterns and the history explains the name plausibly and wrongly, the way local legends do.
